As a newbie I would like to ask why would a non league club organise a behind closed doors friendly?

Not got a clue!
Ask in the car park on Sunday would be my advice.

Just had a quick look into this...
"If you don't open the gates to the fans, you don't have to print tickets, arrange catering, stewarding, police, electricity to the supporter's areas, parking, and so on. Quite often the games are arranged at short notice so it's easier just to keep the fans out.
Don't know what game you're referring to, but maybe - if just a couple of the above reasons are valid - it's one they thought would cost more to let people in than they'd make on the gate?

Chatham away vs Merstham on 11/7/15 - met your criteria of being a match organised at short notice.

And certainly not one to whet the appetite of the locals/drifters.
Don't know what the "break even" attendance would be, but would imagine that game would struggle to reach it - whatever it was!
