As I understand it the difference between Kentish Man and Man of Kent is determined by where a person is born in Kent with the deciding factor being where, in relation to the River Medway.
North/West of the line of the Medway is Kentish man/woman/lady/maiden and South/East is Man of Kent etc.
I was born in Rochester and am therefore a 'Man of Kent' In some towns or villages it may come down to exact birth location. If it matters (??) consult an OS map.
